I don't know anything about Edelbrocks, but I'd be surprised if it had any connection for the stepper motor plug. I put a Weber on mine and let the plug dangle, then eventually cut the wiring to it out of the jeep completely. I assume you have or will Nutter the jeep. With an aftermarket carb, it's caveman simple...cutting and splicing two pairs of wires.
Other things I can think of that might be tricky...hmmm...if it's not a kit, the throttle linkage could get hairy. (Actually, even if it were a kit, that could be the case.) I'd make sure you knew how that was going to reattach before you starting ripping the old carb off. The new air filter shouldn't be challenging...there's lots of room under there.
I had issues with my electric choke not setting or getting stuck that eventually boiled down to the choke butterfly being too big and needing to be filed down, but surely you won't have that issue (!).
I had the impression that 500 cfm was mad overkill for a 258, fwiw...
