I'm thinking I might tow my jeep to Mexico for a white hunt and was wondering if anybody knows of a quality driveline disconnect.

You don't need one to flat-tow, just leave the transmission in gear and transfer case in neutral.

If you use a dolly, just unbolt whichever driveshaft goes to the axle on the ground, and tie it up.
